What is Frushi?  A creative combination of sweet, sticky rice and healthy fruit for a tasty dessert or snack. 

 

Here’s how you can make these treats at home!

 

You will need the following materials:

2 cups sushi rice

2 cups water, plus extra for rinsing

2 tablespoons sushi vinegar, plus extra to prevent rice sticking to hands

2 tablespoons sugar

1 teaspoon salt

Assortment of fruit (melon, berries, mandarin oranges, kiwi, pineapple, etc.)

 

Directions:

1)      Place rice in a large mixing bowl and fill halfway with cold water.  Swirl rice in water.  Pour off water by gently tipping the bowl at a slight angle and using your hand to hold back rice.  Add more cold water and repeat rinsing process two more times.

2)      Pour 2 cups of water in a medium pot and with an adult’s help bring to a boil.  Add rice to boiling water; reduce heat to low, cover and let cook 15 minutes.  Remove from heat; let rest 10 minutes.

3)      Place rice in a large non-metal bowl.  Add sushi vinegar, sugar and salt and thoroughly combine with a wooden spoon.  Cool to room temperature before molding.

4)      Line a platter with wax paper.  Ensure hands are clean.  Rub the palms of your hands with sushi vinegar, grab 1 heaping tablespoon of the seasoned rice and squeeze gently into a 2-inch long rounded edge rectangle.  Place on wax paper and repeat.

5)      To make frushi:  Peel and cut fruit into very small sticks and cubes and other shapes.  Use tweezers to place in creative designs on top of molded rice.  Use strips of fruit-by-the-foot to wrap or decorate your frushi and melt chocolate for dipping.
